Fry 8 to 10 minutes stirring occasionally to make sure all sides are golden and fried. Preheat the oil to 350 degrees Fahrenheit before frying the okra. Next add okra to eggs coating on all sides.

Transfer okra to coating mixture and toss well to coat. Place cut okra in buttermilk to soak for a couple minutes while you assemble the coating. Serve fried okra hot sprinkled with additional salt if you like.

Heat the oil in a non-stick pan add the chopped onions and green chillies when the oil is sufficiently hot. Working in several batches place okra in egg mixture and coat well. Lastly dip back into the coating and set aside okra on baking sheet.

Repeat with the remaining okra.
